A new winter main dish is joining “Bistronomy Breakfast at THE KNOT,” the signature breakfast at THE KNOT SAPPORO.

Supervised by a chef who has earned two Michelin stars in France, our seasonal main dishes are crafted with exceptional technique and depth of flavor.
Paired with a vibrant half-buffet showcasing the best of Hokkaido’s seasonal ingredients, we invite you to experience a new kind of morning — one that turns breakfast into a destination of its own.


Winter Main Dishes (December 1, 2025 – February 28, 2026)

This winter’s main dishes are crafted around the theme of “Reimagining Hokkaido Cuisine.”
Pair your selection with the half-buffet and create your own winter plate filled with seasonal flavors.

Bouquet of the Sea (Limited Availability)
Seasoned with olive oil and salt to enhance the seafood’s flavor, and finished with lightly seared salmon and scallops.
THE KNOT-style seafood bowl, complemented by a sushi-vinegar foam that adds a hint of “vinegared rice” character.  

Hokkaido Chicken Breast Fricassée with Curry Aromas

Inspired by Hokkaido soup curry, this dish gains depth from curry oil and a blend of aromatic spices. A gentle flavor profile with subtle accents that evoke the region’s character.

Makari Herb-Fed Pork Confit

Tender herb-fed pork is lightly roasted for a fragrant finish. Tasmanian mustard and balsamic bring balanced acidity, paired with Hokkaido vegetables for a satisfying plate.
