At THE KNOT SAPPORO, we are redefining mornings with a renewed breakfast experience starting August 1, 2025.
Our new concept, “A Morning to Choose and Savor —Bistronomy Breakfast at THE KNOT“, invites guests to begin their day with a sense of creativity and flavor. Enjoy a chef-curated main dish alongside a vibrant half-buffet featuring seasonal ingredients from Hokkaido.
We offer a new kind of morning where breakfast becomes more than just a meal—it becomes a destination within your journey.

Taste the Seasons of Hokkaido through Bistronomy
“Bistronomy” blends the casual charm of a bistro with the refined flavors of gastronomy.
At THE KNOT SAPPORO, our relaxed yet curated setting provides the perfect backdrop for enjoying a Hokkaido breakfast unlike the typical “local food” offering. Each dish transforms the region’s ingredients into a thoughtful, elevated culinary experience.
Point 1: Chef-Curated Main Dishes That Reflect the Seasons
Three main dishes—each designed by our in-house chef—highlight the flavors of Hokkaido.
From delicate cooking techniques to thoughtful sauces and presentation, every element is crafted to enhance your morning with refined detail and color.
From August to November, the main dish selections are:
・Herb-Crusted Shiretoko Chicken with Sherry Vinegar Sauce
・Grilled Rusutsu Pork served with a creamy Tokachi mushroom sauce
・Pan-Seared Ginzake Salmon finished with a Classic Beurre Blanc
